Nutella Lava Cookies Recipe

A few days ago I posted this picture of Nutella Lava Cookies that I made and I got some really good feedback so I figured, why not share with the world how I made them?

I was pretty happy with how they turned out as above considering it was my first attempt. But you know what they say, practice makes perfect and I learned from a few mistakes on how to tackle the tricky bits the second time around! So, without further adieu, here is how to make this yummy deliciousness! 
Ingredients
2 cups flour
1/2 cup sugar
1 tsp baking soda
1 tsp salt
3 tsp cornstarch 
1/4 cup brown sugar
3/4 cup cocoa powder
1 cup butter
2 tsp vanilla extract
1 cup chocolate chips
3 tbsp vegetable oil
2 eggs



Method
  1. Take a jar of Nutella and two small spoons and start spooning out 25 little blobs of Nutella on parchment paper which has been placed onto a large pan.  The Nutella can be a little tricky to work with so it's okay if it doesn't look perfect. Just try to get them as ball-like as possible!
  2. Place the tray into the freezer for 1 hour to freeze. In the meantime, make the cookie batter!
  3. In a medium bowl, combine the flour, sugar, baking soda, cornstarch and salt.
  4. In a large bowl, whip up the butter until light and fluffy. 
  5. Add in the brown sugar and whip some more.
  6. Mix in the eggs and vanilla extract  and then gradually add cocoa powder until it becomes a mousse like consistency. 
  7. Add the flour mixture little by little until it's completely combined. 
  8. Add the chocolate chips and fold them into the the batter.
  9. Roll the batter into little balls and place them on a separate sheet of parchment paper. It doesn't matter if there's not a bunch of space in between them as you won't be baking them quite yet! 
  10. Then taking your thumb, press a little indent into the middle of the balls as shown below.
  11. If the hour is up, take out your frozen Nutella and start peeling them off of the parchment paper and into the little indent. It's very important to work as quickly as possible as the Nutella will start to melt at room temperature and with the warmth of your hands. After placing the Nutella into the middle, work the surrounding dough around the Nutella until it's a ball again with the Nutella in the middle. 
  12. Place the tray into the freezer and freeze again for an hour.
  13. Preheat the oven to 350 F/ 180 C.
  14. After the hour is up, bake the cookies for 12 minutes.
  15. Let them cool for 10 minutes and you're done!
